That wipe on stuff is good.

As to the oil finish, it depends on the oil. Tung oil, which is smelly,
dries hard, and will after repeated applications make a varnish like
surface. The French polish and the Gunstock finish have varnish mixed
into oils and solvents. They both dry too but require an amazing amount
of elbow grease, nice for a gunstock or a pie crust table, but a project
on paneling. Many oil finishes never do dry and get gunky after a while.
A good oil finish for paneling needs to be waxed to protect it.

In my restorations of pre 1800 paneling, they are left either painted as
would be strictly correct, or if stripped, not much finish to speak of.
The high gloss shiny look is ok for cars and kitchens and bathrooms (
and the outside of Airstreams..) but I think paneling and cabinet work
looks better with a more subtle finish. That's personal of course.
