I'm not familiar with what is in the underbelly area
when its enclosed but if A/S stuffs some additional
batting, then the biggest issue may truly be a floor
which will be a little colder in the cold climes. 
Other than that I wouldn't expect any other major
issues.  Your water pipes are not exposed, and the
holding tanks seem to have the same exposure as
underbelly enclosed units.  I guess if this is a big
issue and too much time hasn't gone by since your
order, you could always request that your dealer check
to see if the factory would enclose your unit's
underbelly.  I added a couple of non standard features
at order time and the factory honored my dealer's
request.  You should be able to get a cost estimate
for this additional work. 

I ordered my trailer in March, but according to the
VIN plate they didn't start the build until April.
