Thanks to each of you who responded with useful advice and experiences.

It is entirely possible that the "$6/hr" employee was just negative toward a
guy who was pulling an old A/S around while he was working.  I may find the
original valves will back out with ease.  But I think I'll follow the advice
offered by using penetrating oil and peppermint oil if I can find it,
judicious use of a rubber-tipped mallet to pound a little on the original
valve, and careful application of a wrench.
