Kerry,
 You can use the black tank for both black and gray water by simply
installing a cap on the outlet and opening the dump valve. Be SURE to
close the dump valve before removing the cap, or you'll have a helluva
mess!

Flushing the black tank with a hose isn't usually necessary. After
dumping, I either fill the toilet a couple of times, then drop it into
the tank, or pour a bucket of water into it while holding the flush
valve/pedal 'open'. I'll sometimes repeat the bucket of water trick. The
dump valve is left open during this flushing procedure, of course.
