probably better that a 'pressure-sensitive switch' (a.k.a. 'strain-gauge')
would be what's called a 'velocity switch'.
these have been used for decades in electronic (musical) keyboards to
achieve a 'dynamic' keyboard effect. simply put, the higher the 'speed' at
which the key (switch) is struck translates into slightly more voltage
output. this is accomplished by actually having two switches built into the
switch body, and the less time between switch contact, the higher the output
voltage.

however, i would be inclined to try the Jordan Research product before
re-inventing the wheel, as it were.
