[A/S] 1972 Overlander Remodel - Laminate or Wood Veneer for remodel?



Good evening everyone,

My wife and I just bought our first travel trailer.  A 1972
Overlander.  It's needs a lot of TLC, and we're thinking about
basically gutting the inside cabinetry, which is damaged and is all a
walnut looking plastic laminate.  We have a cabinet shop to our
disposal, so we're hoping to rebuild with wood veneers in maple, or
birch to bring light colors to the interior.  

Questions:  

-Any thoughts regarding wood veneer plywood vs. laminate for the
cabinets, and doors? 
-Any special plywoods that you may recommend for light weight?
-We're not necessarily worried about keeping the vintage look of the
interior, as much as trying to update the interior with modern
fashion.  Any recommendations?
