I have a similar situation since my driveway is not level from side 
to side.

We'll have the trailer leveled and shore power plugged in a few days 
in advance to cool the fridge down and load it up the day before we 
leave.  Typically we don't hitch up until ready to go, which is 
really no trouble since we have the routine down to a science.

We don't leave the fridge on when traveling, and have driven for 
three hours straight without ice cubes melting or beer getting warm.  
Could have probably gone longer since we didn't open it up en route.

If you've got the fridge all loaded up and won't be opening it, and 
don't have too far to travel, you could probably shut it off and 
hitch up an hour or two before you leave and be okay.
