My guess is that it'd work just fine with one battery. However, if you toss
one battery, you'll be lightening the tongue weight. Dunno if this'd affect
the towing balance.
Why would you want to get rid of one battery? In the event you didn't have
shore power, you'd probably miss the add'l electrical capacity. Lights,
water pump, furnace...
