I've hesitated to mention this because you suggested I-40 which is fine but
there are alternatives.  No one else seems to be willing to venture that
there are perfectly fine non-interstare highways.  I did a 2500 mile trip
about five years ago when I only traveled 50 miles on interstates.  US 36 is
a great road from the Denver area to eastern Missouri.  In the east I tend
to travel the Interstates because otherwise the towns tend to be close
together but here in God's country the two lanes are just fine.  Take this
advice with a grain of salt (I did three trips to the east and back on I-70
last year) but get your thinking away from the superslabs.
