You can paint just about anything with proper preparation. As long as 
the "paper" is in good shape and not peeling, the first step is to 
thoroughly clean it. I use the tired and true painters friend, TSP to 
get rid of the years of crud. Once clean prime the surfaces to be 
painted with a high performance primer/sealer, my favorite is Zinser's 
Bulls Eye 123. I sticks to anything you can think of in an Airstream, 
that you would want to paint, including some of the bare aluminum 
pieces, like the microwave shelf. After you have primed the surface, let 
your creative juices flow.

As far as stripping, I think you will find that that would be the last 
resort, as the "paper" is a self adhesive vinyl product, like window 
decals, that will take a lot of time effort to remove. Probably require 
the use of a heat gun and scraper. Then once all of the vinyl is off you 
have the residual adhesive to remove.

The biggest plus with a properly prepared paint job is that once done, 
you can repaint with half of the preparation.

We don't regret totally repainting the interior of our '85 Sovereign.
