I keep them 65 when they are cold.  You are correct
that tires will increase in pressure as they roll, but
that is taken into consideration by the manufacturer
when they set the max inflation level and load
capacities for that tire.

Tires should never be inflated with the idea that heat
will bring them up to pressure.

I'll probably poison myself by making this statement
but I have had only one tire failure in over 22 years
of towing.  I attribute this to religiously keeping my
tires at max inflation pressures, replacement every 5
years, a lot of luck, and probably because I have
always carried a spare tire.  

The single failure was during a back in to my
driveway.  I knew the tires were low but I was pulling
out of winter storage and figured I would fill the
tires in the driveway at home.  As I was pivoting the
trailer during the backin, I the sidewall bead on the
tire broke free from the wheel and the tire instantly
deflated.
