We never Drink the water in our holding tank..
Just use it for washing and cleaning.
For drinking and cooking we get cheep bottle water by the
gallon.  I find it don't take too many if you don't waist it.
I have used a 250 gal tank and a simple Sureflow pump to
do just want you are wanting.
I would not worry about the weight of the water in the back of your
truck.  If you can't hall 300 gallons something is wrong.  Most any
truck even the little half ton 150 trucks will hall that much with ease.
