I did something very similar at my log cabin in NH
where the field mice invaded in the fall.  I used a
good sized crock, covered it with some heavy paper,
cut an X in the paper and used some grain as bait. 
One night seven mice ended up in it.  I found that
using about six inches of water and some detergent was
the fastest way to drown them.  If you're squeamish
about that, I suppose you could take them far enough
away so they can't find there way back without a GPS.
