Most likely the fridge stops cooling if the coils trying to get rid of the
hot expanded ammonia can't cool which would then allow the ammonia to
condense back into a liquid again.

Sounds to me like the cold temps outside are not allowing the transfer of
heat *because* the fridge coils that are supposed to get warm or even hot
can not do so in such a cold environment.

Is it possible to try and limit the amount of cold air getting into the back
of the fridge area a bit?  I'm wondering what would happen if you try and
restrict a portion of the 'cooling ambient air' which enters via the open
grill in the outside compartment door.  Possibly this would allow the coils
to heat up more which would result in more cooling inside the fridge.

To move air along up the chute and past the coils if you try and restrict
some of that really cold air you could try and install (or just lay on top
of the vent [under the cover] for now) a small fan such as those that come
in computers.  I used one like this on my older Airstream when I put in a
new fridge to increase the air flow over the coils and it really cooled much
better.  In fact, it cools so well I can pull my fridge down to make ice
cubes in just 2 hours usually.

I really think that the cold air outside is keeping the coils 'too cold' and
thus you aren't getting the required evaporation needed to cool the fridge.
