No, you most definitely do not want to use PEX crimping rings with 
polybutylene tubing.  If I had someone locally who would rent the 
crimping tool, as another member mentioned, I would certainly have 
used the brass fittings as much as possible.  However, there are 
several places in my '25' Sovereign that would not permit this 
without major disassembly of cabinets.

I was strongly tempted to try copper - 25 years of experience working 
with both hard and soft copper - but my brother, who is a mechanical 
engineer says that PEX has some ridiculous expansion coefficient - 
much larger than copper should it freeze.
