A real puzzler.  If everything works when you are hooked up to shore power
(using your converter/charger) then all of the things are wired correctly
and all of the fuses should be good.  Now lets just use the battery.
Voltage may be considerably lower (depending on condition of the battery).
If the lights and hood circuits are wired with smaller wire and are farther
away from the battery then the voltage may be too low to operate these
appliances.  Check battery voltage at the lights and/or hood with just
battery and then with shore power.  Should be solid 12 volts plus.  My guess
is the circuit to the non-working appliances is far from the battery and is
probably wired with too small a wire size.
