Because of your experience, I've started looking into the Hensley 
Arrow$$$ hitch (yes, it should inluded dollar signs in with the name).

It really seems like this is the way to go if I do decide to tow with 
the Grand Cherokee. 

I spoke with a person at Hensley today and they are willing to let me 
do a test tow of one of the trailers they sell (Sunnybrook). This 
should give me a lot better idea as to whether I would feel 
comfortable towing with the Jeep before buying an Airstream.
