Running a conventional, even single axle, would not be that much of a problem.  You see them running bob tail all the time at crusing speed.  

Having driven single axle cabovers, (needed the short wheel base for turning an backing as I was hauling horses and farms do not always have lots of room), I can tell you that hitting a bump in a cabover causes the rear wheels to hop off the ground, makes you thing your nose literally when be on the pavement.  But usually not a problem and you could run a crusing speed.  Unless of course your do not check your cab and be sure it is lock down, have seen guys your have had  their cabs flip open/over on them in this situation. 

Hmm, wondering if you do use a semi to pull with if the weigh stations people would be in a bind to determine if you needed permits and such.  Could cause a bit of a
problem with fuel use tax, permits, inspection and such.
