You can do as I do and use a Sherline tounge scale. See

Or, you can rig up a set of levers and a bathroom scale.
One thing that I forgot: you should make sure that your ball mount or
"stinger" is as short as possible. Many folks use an extended ball mount
to clear a tailgate, bike rack, or whatever and that's a very bad idea.
Remember that the ideal is a 5th-wheel hitch or a Pullright, which is a
close cousin. Both get the trailer/tow vehicle pivot point as close to
the latter's rear axle as possible. You don't want your ball mount
sticking out a yard from the receiver.
