I just sold probably the identical model to Wayne Moore.  His email
address is wam52@prodigy.net    He is a really knowledgeable and
competent craftsman and is doing great restoration work on his
Airstreams.  I don't have any photos in a format I can send you but
Wayne might.  
The kitchen (double bed?) is separated from the bed area by an accordion
style door made of a vinyl upholstery material the same as in the
bathroom door.  There is a piece of 1/4 inch plywood with grey woodgrain
that can be slid up from between the kitchen counter and the bed.  You
won't be able to match the formica, but some nice birch to match the
rest of the woodwork would look good.  Perhaps you could coax Wayne to
make a paper pattern of the shape and send you some pictures of the way
it works and looks.  He's a helpful good natured guy and I'm sure he'll
offer to get you the information.  
This is a particularly nice mode/year. The neat chest of drawers and the
bent birch around the bed and the curved toilet surround are well done
and add up to a great interior look.  Good luck with your restoration.
