[a/s] Gas Plumbing?

This is on a 1964 Bambi II
Are there normally gas shut off valves UNDER the trailer? Mine had them but,
the plumbing had been modified and, not sure what was original. We are
replacing the plumbing with rubber hoses. The valves look susceptible to
road hazards. My plan is to shut off heater and water heater [ which had
them] and maybe, refrigerator, cooktop [they had no shut off] but, inside
the trailer.
Also, any idea why the water heater would have a bigger gas line than
anything else?
As we got it, the trailer had a pipe with 3 tee's in it. First one supplies
the refrigerator/ cooktop, second the hot water heater, third one the heater
and a line that just went toward the rear. They weren't set up to daisy
chain the propane were they?
