Regular insulation should do the trick... they now make stuff that's 'faced'
on both sides, so you don't have the itch problem when handling that nasty
stuff.

I'm not sure where you are, but Hanta virus could be a concern where
droppings or deceased meeces are present. You probably want to wear a
respirator, anyway, and remove as much of the old decomposing stuffing as
you can.

Re: prevention - it seems that using dryer/softener sheets ('Bounce')
stuffed around potential rodent entry-points serves as a deterrent to future
invasions.
