Actually the brakes should work regardless of the battery switch
position, as the breakaway brake switch should be connected directly
to the battery, before the disconnect, and under normal service the
brakes are powered from the tow vehicle.

Are you saying that the refer works on 12 volts, or that battery power
is needed to run the frige on gas?  I highly recommend that NO gas
appliances be on while on the road, and that the tanks be closed.  I
believe I read somewhere that that is the law in some states.  All you
gotta do is forget to shut things down once while fueling and have an
oppsie.  Could turn out to be a real shorts shaking day, probably for
witnesses because you would be too high up to worry about stains.

Yes, they are powered by the brake controller when connected.  The
brakeaway switch locks them up when the trailer breaks away from the
prime mover, eliminating the possibility of a runaway trailer.  Same
brakes, different power supply.  That's why it is unsafe to tow a
trailer with a dead/missing battery.  Also why a good charge line to
the trailer battery is so important.
