Others will address some of these concerns but here are my thoughts on the 
areas that I may be of help with.

I love Colorado, too but it gets cold there in the winter... it would be 
very expensive (but not impossible) to heat an Airstream there.   I have 
been told that the Canadian built RVs are much better insulated.

I'm a lacto-vegetarian and find I use the microwave for about 90% of my 
cooking.  I do have the gas oven, also.  If the trailer does not have an 
oven then it will have a convection microwave.
I understand you can bake in a convection/microwave but I haven't tired it 
myself.
