My 1979 31' center bath has an "overboard drain" so to speak. A line
that tees off from the water pump with a valve, and then discharges
out the bottom of the water tank enclosure. Whenever winterizing, I
just let the pump run until that overboard drain is only "spitting"
water. Antifreeze is put in thru a 3-way valve that I added, and any
water that might remain in the tank has not damaged it when
freezing. That said, I only completely empty the tank when
winterizing.
We'll usually head out with a full 50 gallons and come home with
roughly 1/4 tank or maybe a little less. That remaining water is
useful for when cleaning the interior between trips, and is topped
off before leaving on the next one a few weeks later.
My water tank is centered over the forward axle and I haven't noticed
any real difference when towing it full or when returning with the
tank almost empty.
We recently took a trip to the Smokies and I filled the tank about
1/3 just to have some for emergencies. The campground we stayed at
had full hook-ups so I saw no need to haul the extra weight.
One final thing I'll add is that we never drink water from the tank.
For a weekend trip, several gallon jugs of fresh water from home work
for anything we consume.
