There is another trick you can use when the clearance is tight.

Install a Clock receptacle instead of a standard duplex receptacle.  Clock
receptacles are designed with a recessed single electrical receptacle so
that a wall clock will fit over them flush against the wall.

As a cabinetmaker, I have used them many times to connect microwaves,
exhaust fans, electric igniters for gas cook tops, etc.
