I did it last year on my 1978 28' airstream.  It was not hard.  I ripped out 
the carpet and made sure all of the staples were out.  I then laid a layer of 
thin foam to help level out the floor.  I started laying in the pergo and laid 
a bead of glue along the whole edge of the floor.  I wanted to make sure that 
water could not migrate down through the joint.  The hardest part was trimming 
out the edges with molding.  Make sure you leave about an 1/8 inch to 1/4 inch 
space between the edge of the floor and the wall.  The foam makes it much more 
comfortable to walk on and it will allow it to wear better I believe.   Just 
take your time and be patient.
