I am halfway through doing this exact thing.  I got a Maxx 1500 W 
continuous unit. You will find you MUST install the inverter close to the 
batteries. Keep the battery cables as short as possible (read instructions 
carefully). We are talking about within 2-3 feet of the batteries.

I have two 00 cables about 30 inches long.  With those cables and a 300 amp 
fuse in line I get only 0.1 Volts drop on the 12V input line at the 
inverter with the coffee maker brewing as a load. All goes direct to the 
batteries - uses no pre-existing wiring.

Some guys change the trailer wiring to provide AC distribution. Looks like 
I can remove one circuit breaker and then feed inverter output into that 
line, thus providing inverter output to all receptacles serviced by that 
line around the trailer. Not sure I will do that, but looks like a good 
possibility.

Looking forward to having microwave/coffee pot full usage at rallies as 
well as roadside lunch breaks.

This is the last of my current projects.  A month ago I installed 235 watts 
of solar panels I bought at Lansing and this will fit in well with the solar.
