I just re-read (by the dawn's early light) what I wrote last night and 
realised that it sounded as though I meant 11" was too high.  What I was 
trying to say is that 11" gas is higher service pressure (typical for 
propane) as opposed to natural gas which is usually 5" water column. 
(One inch wc is .039 psig, for you collectors of trivia.) That is why 
there are different size orifices in the burner nozzle.  Natural gas 
orifices in propane service make for a LARGE flame!  The reverse of 
course will take forever to perk the coffee.  Orifice size is rarely an 
issue in an RV (unless you get one that has been in a fixed location 
long enough to have been piped to the utility) but is a definite 
consideration in home appliances.  The safety issue is why any new home 
appliances will come with the propane (smaller) orifice(s) installed and 
the natural gas (larger) orifice(s) in a little cloth baggie.

Just for comparison, the generator sets I worked on in industry burned 
natural gas pressurised to 450-600 psig.  Serious stuff; smoking area 
outside the gate.

(Wrote the course and taught this stuff for 10 years.  Guess old habits 
die hard.)
