Ron, there was some talk awhile ago about removing the vinyl. 
Apparently, it isn't just glued on but pretty well married to the 
alluminum. And in any case, they probably didn't use aluminum with a 
good surface to begin with.  Crawl under a cabinet and cut out a test 
piece first. I think you'll find it will be nearly impossible.

Some folks have painted over it, but surface prep will be important. I 
would reccommend you use a sealing primer, like bull's eye or something 
that is shellac with pigment in it. Otherwise, whatever is exuding out 
of the vinyl will come right through the paint. sounds like a Stephen 
King book....
