By now you likely have all the advise you want.  Here is some more.

We have a 1959 Tradewind International and I have seen a number of 
vintage Airstreams and wouldn't trade our bathroom for anything I 
have seen in vintage.

This site has two  trailers ours is the second unit with nine

Here are my comments:
1) I notice on newer units like yours often the toilet is centered on 
the bathroom door, not my favorite location. Ours is to your right as 
seen from the inside (street side).   Also our blackwater tank is 
above the floor.
2) We have a very nice bathroom vanity, original as near as I can 
tell.
3) the tub and shower are to the left of the vanity.
4)unless someone has already done so, you will be wanting to add grey 
water tanks.  As my blackwater tank was above the floor, I added the 
grey water tanks below the bathroom floor but above the belly skin.   
I had to lower the skin about 3" at the left frame member and sloped 
back to zero at the right frame member. You can barely see it on the 
street side photo.

Hope this gives you some ideas.
