Our first AS was a 26 footer with twin beds in the center and a rear bath. 
It was a simple job to add homemade bunks for our kids over the twin beds 
and attach the ends of the bunks to the existing walls at the head and foot.

It would have been more difficult with a twin rear bedroom due to the 
curvature, but still possible.

You might be able to get bunks as an option - ask the factory.

Of course, some larger models have dinettes as well as sofas - those would 
give you the two extra beds and be more livable during the day as well.
