Dave,
 You need to get one or more books on the subject. "Managing 12 Volts"
by Barre comes to mind.

You CANNOT operate an A/C on an inverter (as you found out). Even if you
had one large enough, you don't have nearly enough battery to do any
good.

The Univolt is used to supply power to your 12VDC circuitry when
connected to shore power. You'd be trying to make a perpetual motion
machine by operating it from an inverter.
