I , too, am a brightness buff!... I like a lot of light.  The halogen lights 
do provide a great deal of light, but as mentioned before they can distort 
the plastic in the original fixtures.

I went to the local building supply house and bought several of the 
undercounter halogen lights ( not the kit that has the converter to change 
the voltage to 12V)..just the lights themselves.  I bought a prefinished 
shelf that matched the wood in my International and surface mounted the 
lights to the shelving.  I removed the old light fixture that was above the 
sink and mounted the shelf and lights to the underside of the overhead locker 
by attaching it with screws from inside the locker.  I then attached the 
halogen wiring to the original wiring from the old fixture.  This allowed the 
new lights to work from the old switch.

I later added two more halogen lights flush mounted into the overhead filter 
above the stove and tied them into the new lights above the sink.  I now have 
5 halogen lights for the cooking area.

I also mounted an additional 3 halogens and shelf to the underside of the of 
the overhead locker above the couch and added a separate switch for them.

In the head, I flush mounted two additional halogen lights to the underside 
of the compartments in the bath and wired them into the "bright" side of the 
wiring in the original lights.  This allows lots of light when needed...and 
also retain the "soft" lights when  turned to the "soft side" of the switch.

Since the lights are now operating on 12 VDC instead of converted 12 VAC, 
they have a much longer life.  I have only replaced one bulb in the last two 
years and I use them virtually everyday.

Just something that worked for me without doing any major repacement of 
fixtures.
