I think (though you should check this with Suburban) that such a switch already
exists, i.e. the cutoff switch which is opened when you move the thermostat to
the full "OFF" position.  That shuts down the burner but does allow the blower
to continue operating as long as the internal temperature sensor of the furnace
tells it it has to.

If that is the case, then any cutoff switch installed in connection with the
door should be wired in series with the one at the thermostat.
