[A/S] towing a dinghy

I love to lurk on this site even though we have an airstream motorhome.
I know most of you tow trailers but maybe there is someone out there who
can help us. We have a 1988 345 classic airstream motor home with a gas
chevy 454 engine. We have towed a 1982 VW deisel truck that weighs
about 2000 lbs. It towed like
it was not even there. The VW is on it's last leg and we need to buy a
new car. The trouble is they all weigh more than the VW and we are
having trouble trying to figure out how much we can tow. We did not
get the Chevy manual with the purchase of our motorhome and the
airstream book that came with it does not help us. The Chevy dealer in
town just laughed at us when we asked him for help getting a replacement
book. Any way we know the Gross weight Rating is 16500 but we don't
know what the gross combined weight is. We travel light so don't use
all of the weight. Anyone out there who has a 345 ? What do you tow
and how much does it weight.
Anyone know how to determine the gross combined weight if you don't have
it?
Anyone have an extra chevey manual for 1988 airstream 345 so we can look
it up?
The bottom line is: How heavy a toad can we tow safely ? Anyone have
any ideas????
