Dean,
The EU2000 has a 4 sec overload electronic breaker.  If the overload is
severe it will cut the output quickly, but if only a slight overload, it
waits for 4 seconds (such as an AC starting).  Still the problem is that the
inverter can only output so much current and then the voltage starts to dip
and that makes the AC compressor work harder which draws yet more current.  

There is a potential way to remotely control the eco-throttle, but only if
you have a newer A/S with the Dometic Digital combination thermostat (the
one they install with the heatpump models).  This thermostat has an optional
module that is designed to send a start signal to a genset, then wait for
the genset to come up to speed, then finally start the air conditioning.
Once the AC is no longer needed, it sends the kill signal to shutdown the
genset.  Unfortunately, the EU2000 is not available with electric remote
start (the EU3000 does have this as an option). But I almost know that the
this signal could still be used to control the eco-throttle operation.  The
eco-throttle switch is a simply rocker switch, so a relay that mimicked its
operation could be added to the EU genset.  The start signal could be used
to set the relay such that the genset(s) changed to eco-throttle off (ie
full output).  This would allow EU genset to operate in eco-throttle mode
for normal trailer requirements and the Dometic thermostat would switch it
to manual (ie full output) mode when there was a need for the AC.  This
would make sure that the EU2000 pair was at full output before the AC
actually hit them with its load.  If and when I purchase my EU2000s, I
intend to set mine up this way.
