Re-plumbing water from the fresh water tank pump to a dedicated spigot would
not be all that difficult (depending on where your water pump resides).
What you would need to do is install a three-way valve at the output from
the pump so that it would direct water either to the entire system or just
to the dedicated spigot(s). The spigot type I envision is the type used for
sink mounted reverse osmosis units.  These are plumbed with 1/4" plastic
tubing, so running the tubing from the spigot to the valve should not pose
insurmountable obstacles.  If you needed the pump to supply the entire
trailer, a simple turn of the 3-way valve would turn off the spigots and
allow water from the pump to flow into the rest of the trailer plumbing (no
need to supply the spigot(s) if the whole system is being supplied from the
fresh water tank).  By running lines to the kitchen and bath you could have
spigots at both locations.
