You are correct about gray water.  On my trailer, the gray water tank 
is labled as auxilary tank, and the black tank is called the main 
tank.

Voulmes of water and holding tanks will vary depending on model and 
year.  How long you can make them last depends on your usage, but 
here is how it works for us:

We have a 50 gallon fresh water tank, 25 gallon gray, and 20 gallon 
black.  This lasts us (two adults) easily for one weekend, with 
taking one navy shower (not letting water run continuously) each 
during that time.  If staying a thrid day, we will dump our gray tank 
into a portable blue tank which we tow to the campground dump 
station.  Can each take an extra shower then, and will almost be out 
of water at end of the third day.  Black tank might be 3/4 full by 
then.  If you have a working tank level monitor it helps a lot.

Batteries will be charged by the tow vehicle when plugged in and 
rolling down the road, and by the converter when plugged into shore 
power.

Size of spare tire depends on year and model.  Either tow the trailer 
into a tire dealer and ask them to sell you the right size, or better 
yet, pull one off at home and take it in.  That way when you get your 
new spare home you can do a test fit.

Bring a lot of tools, including a cordless drill and pop rivit gun 
with a stock of aluminum rivits.
