I am not sure what you mean by a "Johnson bar" but all modern
controllers that I am aware of have manual over-rides. I have even
heard of some with remote controls for those who cannot mount the
controller in a convenient spot. In my experience, these are levers
that allow you to apply whatever braking effort you desire.

The issue of compensating for resistance changes due to coil heating
is an interesting one. You should never get yourself into a spot where
this is a factor of any note, IMHO. 

All modern controllers of note are also proportional as well and they
all have to "guess" about brake application. The key difference is
what they use to make their guess. I would not be overly hasty in
dismissing one form of controller input over another as they all have
issues and there are excellent controllers using each of the three
main inputs (hydraulic pressure, brake pedal position, vehicle motion)
that are currently readily available.

As far as handling goes, normal operation in conjunction with the tow
vehicle is off the list. If you are having stability problems you have
to use a manual override on the trailer brakes to drag it back into
line. Normal operation is intended to stop the trailer and the tow
vehicle evenly in 'normal' conditions. Whenever you have abnormal
conditions, such as jacknifing, slick roads, or whatever, you have to
take abnormal actions and illustrate your driving acumen.
