I have a '71 Safari.

The three valves under the kitchen sink are drain valves.  One for the hot
water supply lines, one for the cold water supply lines, and the last for
the fresh water tank.

The rear two valves in the back of the trailer are also drain valves for the
hot and cold supply lines.

All of these valves are used to drain all the water from the trailer during
winterizing.

There is a shut off valve for the toilet in the cabinet behind the toilet.
Simply lift the lid to the cabinet and you will see the valve down inside.
