Assuming that the bypass valves are installed correctly, bypassing the water 
heater will take it out of the circuit and allow your water system to work 
without hot water.  You will need to close the valves to and from the water 
heater and open the valve on the bypass line (it is located between the two water 
lines).  The two valves you close will be between the bypass line and the water 
heater.
