[A/S] tow vehicle advice

Hello Listers hither and yon -

After lurking for over a year, here is my first post:

We purchased a sweet clean and shiny 22" 1962 Safari last year in AZ. Our 
thought was to let it winter in Bisbee, with my brother, then go fetch it 
back to Seattle in June. 
We decided and looked specifically for a smaller, older Airstream for the 
lighter weight and easier towing.
We had intended to tow it with our 1990 Mistubishi Montero. Which - given the 
amount of TLC it has required over the last 6 months, is not looking like a 
good idea. (Rats - the best laid plans...)

What we need is :
-something that can hold 5 adults and occasionally children comfortably for 
long stretches of time. (We have a theater company and the car is the tour 
vehicle..)
I keep eyeballing  conversion vans, but my bro pooh-poohs the idea.
- something that is reasonably parkable in an urban downtown area - it would 
need to double as our everyday car, and I don't want to get killed with lot 
parking if I can't find a tall enough garage...
- something that has some legs to it.  We are starving artists (with a great 
visual style - hence the Safari) - we could use advice on what might be 
repairable in the next 5-10 years without needing to manufacture it 
ourselves! :)
 - oh - decent gas mileage would be good.

There is a great deal of overwhelming info out there about tow vehicles - For 
me, it would be extremely useful to hear what folks are driving NOW and what 
they used to have,(good, bad and offbeat) especially as it relates to my 
seemingly contradictory needs. I know Hunter swears by her truck, but that 
isn't a viable option for us.  

If only I could find a 1968 stationwagon with only 85,000 miles on it.... 
that was garaged for the last 30 years.... under $5000...

Your advice is appreciated - and your cumulative experience is daunting.
