Both Bridgestone and Yokahama make a 7.00 x 15" Radial tire though 
you will likely have to special order them.  Either of these would be 
a much better choice for your Airstream than Travel Trailer tires.

Make sure they are spin balanced when they are installed and though 
they are 8 ply and rated to carry 65 PSI you should only run 45-50 on 
a 25'. Do not let them sell you a bias ply tires for an Airstream as 
these ride too hard.

Unless you are planing on Alaska or Mexico you really do not need a 
spare.  With the 7.00 x 15 Tire flats are very rare and if you do get 
one it will run all day on 3 wheels. If you have to run a long 
distance on 3 wheels you put the single tire up to 65 PSI.  It is 
something I have done many times and I just keep the speed down to 50 
MPH.
