I towed my GT from NY to CO with no problems with my 1985 4 cylinder Toyota 
pickup.  It did fine on the flats, slow on the passes.  It is still running 
with the original clutch and transmission and 215,000 miles on it. The 
handling was not bad even though I was only using a bumper hitch (the heavy 
duty one from Toyota) and no sway bars or such.  I can hear the howls of 
protest rising as I type.LOL! However, you can't argue with success.  If one 
is only going to tow on relatively flat roads, can stop if it is bad weather 
and are only going 125 miles, it can be done safely with a small pickup.  I 
think the hitch weight and proper loading and careful driving have a lot to 
do with it.
All that said, I now use a bigger truck and a better hitch as I have learned 
from experience that I want more power here in the Rocky Mountains, but one 
has to balance the cost of the tow vehicle with the amount of use it gets.  
If one has the ability to choose when one tows and what kind of conditions 
one will encounter, it can be balanced out.
