I have a '75 Sovereign, and there is no room for the micro there either.
I keep a small portable unit in the closet (on the shelf over the
roadside wheel well) and just move it to the galley counter for use. 
The circuit over the sink provides enough power to run the micro just
fine.  No problems with the exhaust from it, as it's only used for brief
periods.
